White chocolate and fudge cookies

Delicious white chocolate and fudge cookies

Makes approx. 30

Ingredients:

250g plain flour

1/2 tsp Bicarbonate of soda

175g butter

175g light brown sugar

100g caster sugar

1 egg + 1 egg yolk

1 tsp vanilla extract

100g white choc chips

100g fudge chunks

Pre-heat the oven to 180c, 160c (fan) Gas mark 4

Line a couple of baking trays with baking paper (greaseproof paper)

Method:

Sift the flour and the bicarbonate of soda.

In a large separate bowl cream the butter with both the sugars until light and fluffy.

Slowly beat in the egg along with the extra yolk and the vanilla extract.

Gently beat in the flour and all the other ingredients until just combined.

Spoon the mixture into 5cm rounds (approx. dessertspoon full) on to the baking trays, leaving space for them the spread, and they will spread, a lot.

Bake for approx 11-12 minutes.

Remove from the oven and leave to cool for 5 minutes on the baking trays before transferring to a cooling rack.
